Preparation Steps
  1. Preheat oven to 375°F. Slice each chicken breast horizontally to create a pocket. Sauté spinach in 1 tablespoon olive oil until wilted, then mix with feta cheese and garlic powder.
  2. Stuff each chicken pocket with the spinach and feta mixture. Secure with toothpicks if needed.
  3. Heat remaining olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes on each side until golden.
  4. Transfer chicken to a baking dish and bake in the preheated oven for 20-25 minutes until cooked through.
  5. Remove toothpicks, serve hot, and enjoy your delicious spinach and feta stuffed chicken.
