- In a large bowl, mix cottage cheese, flour, baking powder, salt, olive oil, spinach, and mozzarella until combined. Form into a log, divide into six pieces, shape into circles, and poke a hole in the center.
- Place shaped dough on prepared baking sheet, brush with egg wash, and bake for 22-25 minutes until golden.
- Transfer to a wire rack to cool and serve warm or at room temperature.
