  • 1 ounces strawberry gelatin
  • 0.25 cup cold water
  • 8 ounces cream cheese softened
  • 0.62 cup confectioners' sugar
  • 0.57 cup sour cream
  • 1 teaspoon vanilla extract
  • 238 g heavy whipping cream

Method
 

Preparation Steps
  1. In a small bowl, whisk together strawberry gelatin and water until the gelatin is mostly dissolved.
  2. In the bowl of a stand mixer fitted with the paddle attachment, add cream cheese and mix on medium speed until smooth.
  3. Stop the mixer. Add confectioners' sugar, strawberry gelatin, sour cream, and vanilla. Mix on low until smooth, scraping sides as needed.
  4. Pour heavy whipping cream into a large bowl.
  5. Using a handheld mixer, whip the heavy cream on low to high speed until stiff peaks form, about 3-5 minutes.
  6. Fold the whipped cream into the cream cheese mixture until fully combined. Transfer to serving dishes and refrigerate until serving.
