  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 cup chopped spinach
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon black pepper
  • 4 bell peppers bell peppers halved and seeded

Method
 

Preparation Steps
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, cooked rice, spinach, diced tomatoes, garlic powder, paprika, and black pepper. Mix well.
  3. Stuff each bell pepper half with the chicken mixture and place in a baking dish.
  4. Sprinkle shredded mozzarella cheese on top of each stuffed pepper.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
  6. Serve hot, garnished with fresh herbs if desired.
