Preparation Steps
- In a bowl, whisk together soy sauce, oil, vinegar, bourbon, and brown sugar. Place chicken in a baking dish, pour marinade over, add ginger, garlic, and half of the green onions. Cover and marinate for at least 2 hours.
- Preheat oven to 350°F. Remove chicken from marinade and bake in a oiled baking dish for 45 minutes, basting occasionally.
- Once cooked, broil chicken for an additional 5 minutes to caramelize. Meanwhile, cook rice according to package instructions.
- Serve chicken over rice, garnished with remaining green onions.
