Preparation Steps
- Preheat oven to 350°F. Spray a 9x5-inch loaf pan with cooking spray and set aside.
- Peel and chop sweet potatoes into 1-inch chunks. Microwave with 3 tablespoons water, covered, for 15-17 minutes until very tender. Mash and let cool.
- In a bowl, whisk eggs, oil, buttermilk, and vanilla until combined. Add mashed sweet potatoes and mix well.
- In a large bowl, whisk together flour, sugars, baking soda, cinnamon, ginger, nutmeg, allspice, cloves, and salt.
- Pour wet mixture into dry ingredients and stir gently until just combined.
- Transfer batter to prepared loaf pan. Bake for 60 to 70 minutes until golden and a toothpick inserted in the center comes out clean.
- Allow bread to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
