  • 1.25 lbs boneless skinless chicken breasts diced into 1-inch cubes
  • 1 Tbsp olive oil
  • 0.25 cup low-sodium soy sauce
  • 2 Tbsp honey
  • 1.5 Tbsp light brown sugar packed
  • 1 Tbsp rice vinegar
  • 0.25 tsp toasted sesame oil
  • 2 tsp peeled and minced fresh ginger
  • 2 tsp peeled and minced fresh garlic
  • 2 tsp cornstarch
  • optional Sesame seeds and chopped green onions for serving

Method
 

Preparation Steps
  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken and cook until browned on all sides, about 4 minutes. Continue to cook until internal temperature reaches 160°F, about 3 minutes more.
  3. While chicken cooks, whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a small bowl.
  4. Pour the sauce into the skillet with chicken and cook until thickened, about 1 minute.
  5. Serve warm with sprinkled green onions and sesame seeds if desired.
