  • 1 pound pasta (fusilli or small shaped pasta)
  • 0.5 large cucumber diced
  • 2 roma tomatoes tomatoes diced
  • 1 medium bell pepper seeded and diced
  • 14 oz heart of palm drained and diced
  • 7 oz sliced turkey breast
  • 3.8 oz black olives drained
  • 10 leaves fresh basil sliced in ribbons
  • 0.25 cup lemon juice from half a lemon
  • 0.75 cup balsamic vinaigrette
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon dried chili flakes optional
  • 0.25 cup feta cheese optional

Method
 

Preparation Steps
  1. Cook the pasta according to package directions until al dente. Drain and rinse with cold water. Set aside.
  2. In a large bowl, combine diced cucumber, tomatoes, bell pepper, heart of palm, sliced turkey, black olives, basil, and lemon juice. Toss gently to blend.
  3. Add the cooked pasta to the bowl, pour in balsamic vinaigrette, and toss until evenly coated.
  4. Season with salt, pepper, chili flakes, and optional feta cheese. Mix well.
  5. Serve immediately or chill for 1-2 hours before serving.
