  • 6 medium Yukon Gold Potatoes
  • 1 tsp Sea Salt divided
  • 0.75 cup Water
  • 0.5 tsp Sea Salt
  • 0.5 tsp Ground Black Pepper
  • 5 cloves Raw or Roasted Garlic or sub minced garlic sautéed for 3 minutes in olive oil
  • 4 Tbsp Vegan Butter such as Earth Balance, melted or softened
  • 0.25 cup Fresh Chives for topping, optional

Method
 

Preparation Steps
  1. Peel the potatoes for creamier mash or halve and place in a large saucepan. Cover with water by about 1 inch.
  2. Bring to a boil over high heat, add 1 tsp salt, and cook for 25-30 minutes until very tender.
  3. While cooking, chop chives and measure out vegan butter.
  4. Drain the potatoes and return to hot pot off the heat for 1 minute to evaporate excess water.
  5. Mash the potatoes until fluffy using a potato masher.
  6. Add vegan butter, garlic, salt, and black pepper. Stir well, taste, and adjust seasonings as needed.
  7. Top with chopped chives if desired. Serve warm with favorite gravy or as is.
