  • 1 can chickpeas 15 ounces, drained and rinsed
  • 0.5 cup grated carrot
  • 0.25 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Method
 

Preparation Steps
  1. In a food processor, combine chickpeas, cooked quinoa, grated carrot, parsley, cumin, paprika, and salt. Pulse until mixture is well combined but still chunky.
  2. Transfer mixture to a bowl and form into 8-10 small patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 3-4 minutes on each side until golden brown and cooked through.
  4. Serve warm with your favorite dipping sauce or salad.
