  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 large apple, peeled and chopped

Method
 

Preparation Steps
  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  2. In a separate bowl, beat the eggs and then whisk in the milk and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped apples.
  4. Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes until golden brown.
  6. Serve warm, topped with whipped cream and maple syrup if desired.
