  • 1 can (20 ounce) crushed pineapple in juice, undrained
  • 1 container (8 ounce) frozen whipped topping, thawed
  • 2 cups mini marshmallows
  • 1 cup chopped pecans or walnuts (optional)

Preparation Steps
  1. In a large bowl, combine the instant pistachio pudding mix and the crushed pineapple with its juice. Stir until well combined.
  2. Gently fold in the thawed whipped topping until just combined. Be careful not to overmix.
  3. Stir in the mini marshmallows and the chopped nuts, if using.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to set.
  5. Serve chilled. This salad can be stored in the refrigerator for up to 3 days.
